Cozy Coconut Broccoli Soup
There is something especially satisfying about a simple, nourishing soup, and this one delivers every time. Creamy without dairy, gently spiced, and full of fresh flavor, this coconut broccoli soup is an easy way to bring a little comfort to your week. It comes together with minimal effort but feels thoughtful and balanced, making it perfect for a relaxed Tuesday meal.
Ingredients
- 2 broccoli crowns, roughly chopped with stems
- 1/2 medium yellow onion, diced
- 4 cups veggie broth
- 1 can coconut milk
- 1 clove garlic, minced
- 1/4 tsp chili flakes (adjust to taste)
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
Chop broccoli into small to medium florets, including some stalk. Dice the onion and garlic.
In a large pot, heat 1 tbsp oil over medium heat. Add onion sauté for 5 minutes, until fragrant. Add garlic and cook for another minute.
Add broccoli along with chili flakes, salt, and pepper. Stir for about 1 minute.
Pour in veggie broth and increase heat to high. Bring to a boil and cook for 10 minutes, until the broccoli is very soft.
Stir in coconut milk, reduce heat to low-medium, cover, and simmer for another 5 minutes.
Remove from heat and allow to cool for about 5 minutes.
Blend using an immersion blender until smooth, or leave some texture if preferred. Or blend in a high speed blender in batches
Notes
For a brighter green color, add a handful of spinach just before blending. It will not change the flavor but will give the soup a more vibrant appearance.
