Simply Healthy Caesar

A vibrant mix of romaine, arugula, brussel sprouts, roasted carrots, cauliflower and marinated chickpea and quinoa - mingled with roasted red peppers, capers and served with our house creamy Vegan Caesar Dressing.

To Serve

TO SERVE: Enjoy cold or room temperature - or warm your cauliflower and shredded sprouts for a warm cool combo. Toss with dressing and pumpkin seeds or savory granola. Pairs well with roast chicken for added protein.

Summertime Tomato Soup

Tomato soup is one of our favorites any time of year, but especially when the tomatoes are fresh from the Farmer’s Market. It’s the ultimate healthy comfort food - filled with a variety of vine ripened tomatoes, herbs, garlic, and perfect alongside avocado toast or a melty grilled cheese sandwich or pairs nicely with our Quesadilla this week

To Serve

TO SERVE: Serve warm (or chilled!) with fresh basil leaves, a drizzle of olive oil, and a sprinkle of house made pecan parmesan, and savory granola. Pairs well with our Quesadilla this week.

Entrees

Black Bean Quesadillas with Mexican Style Chop Salad + Chipotle Ranch Dressing

Black Bean Quesadillas — a fun vegan spin on your classic bean and cheese quesadilla. Nothing is quite as fun and comforting to eat than a quesadilla. Sandwiched between a gluten free tortilla — you’ll find a protein packed meal perfect for lunch or dinner this week.

To Serve

TO SERVE: Place a nonstick skillet on medium heat and add a small amount of coconut oil or olive oil. Heat the oil in the skillet. Add the quesadilla to the pan and heat each side until nice and crisp. After flipping it a few times, your quesadilla will be reheated in a matter of minutes and ready to enjoy. Serve with crunchy chopped salad on the side.

Pairs well with our Cilantro Jalapeño Pesto and the Cashew Queso Dip this week.

Creole Style Jack Cakes with Mixed Cabbage Slaw and Remoulade Dip Sauce

Shredded jack fruit, hearts of palm, chickpeas, creole seasonings and lots of fresh herbs make for the most delicious vegan “crab” cakes!

To Serve

TO REHEAT: Add a small amount of oil in the bottom of a fry pan or cast iron skillet. Bring it to heat, then add the jack cakes and cover with a well-fitting lid. Heat on each side for a few minutes, or to your desired temperature.

Serve on butter lettuce leaves with a delicious vegan remoulade sauce, a sprinkle of fresh spring onions and a side of crunchy slaw.

It's no secret that we love Mexican style bowls at TF and one of our favorite burrito bowl creations is as light and fresh as it gets! A healthy combination of flavors made with our cilantro lime rice, and packed with roasted veggies, fresh greens, corn from the cob and plenty of plant-based protein. Could also be paired with organic roast chicken. This one is a Fan Favorite….Enjoy!

NOTE: All of the bowls and salads can be served with optional animal protein

To Serve

TO SERVE: This dish can be served room temperature or you can warm the rice, corn, beans and sweet potato components in a saute pan on the stove top. Keep the romaine and cabbage cold and crisp, toss to combine. Once plated - drizzle with our house made Avocado Dressing, a bit of salsa and a squeeze of lime. Pairs well with our Cilantro Pepita Pesto.
