Creamy navy beans and tender artichoke hearts are blended with fresh lemon juice to create a rustic spread that's delicious piled high on toasted crusty bread. This one is a Tuesday Foods favorite!

Ingredients

  • 1 (10-ounce) jar artichoke hearts in oil, drained and roughly chopped
  • 1 cup canned navy beans, drained and rinsed
  • Juice of 1/2 lemon 
  • 4 slices crusty bread
  • Small handful fresh basil, thinly sliced
  • Sea salt and black pepper, to taste

Instructions

1. Make the Artichoke Spread

Add the artichoke hearts, navy beans, and lemon juice to a food processor. Pulse until a rustic, slightly chunky spread forms. Season with sea salt and black pepper to taste.

2. Toast the Bread

Heat a grill pan or skillet over medium-high heat. Toast the bread for about 2 minutes per side, until lightly charred and crisp around the edges.

3. Assemble

Spread generous spoonfuls of the artichoke and navy bean mixture onto each slice of toasted bread. Finish with fresh basil and serve immediately.
