Topping Ideas
While pure maple syrup is a classic choice, we love creating our own homemade toppings in the Tuesday Foods kitchen. Here are a few of our favorites:
Almond Butter Drizzle: For a protein-packed, nutty twist: In a small bowl, whisk together 1/4 cup warm water, 1/4 cup almond butter, 2 tablespoons maple syrup, a pinch of sea salt, and a dash of vanilla extract. Drizzle over pancakes for a rich, delicious alternative to syrup.
Cinnamon Apple Topping: For a warm, spiced apple topping: Heat 1/2 tablespoon of vegan butter (or regular butter) in a skillet. Add one sliced apple and cook for about 5 minutes, stirring frequently. Mix in 1/8 teaspoon of cinnamon and cook for another minute. Serve warm over pancakes!
Maple Coconut Whip: For a decadent dessert-like pancake: In a high-speed blender, combine 1 can of coconut cream (solid part only), 3 tablespoons maple syrup, 1 teaspoon cinnamon, and 1 teaspoon vanilla extract. Blend for about 8 seconds until smooth. Top pancakes with a dollop of this creamy, dreamy topping

Healthy Apple Pancakes (Vegan + Gluten-Free)
Ingredients:
- 1 1/2 cups spelt flour or gluten-free baking flour
- 2 tablespoons coconut sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon allspice (or nutmeg, ginger, or cardamom)
- 1/4 teaspoon sea salt
- 1 1/4 cups oat or almond milk
- 1 teaspoon apple cider vinegar (or lemon juice)
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 tablespoon coconut oil
- 1–2 apples (Fuji or Honeycrisp preferred)
Instructions:
- Combine nut milk and vinegar to create a quick “buttermilk.”
- Heat a large skillet over medium heat.
- Mix dry ingredients in a bowl. Add applesauce, non-dairy milk, and vanilla, stirring just until combined.
- Slice apples thinly and heat coconut oil in the skillet. Place apple slices on the griddle, then pour batter over them.
- Cook pancakes 2-3 minutes per side. Serve with maple syrup or one of our delicious toppings!
Pro Tip: Batch cook and freeze leftovers for up to 2 months. Reheat in the oven or microwave for a quick treat!
Want to use a box mix? You can! Just prepare the batter according to directions and add applesauce, spices, and sliced apples as outlined in the recipe.
