Simple Pleasures: Fig Toast With Ricotta & Honey

There’s something about figs that feels like treasure. Their season is so brief—just a few golden weeks when the markets are overflowing with them—and we can never resist!
Fig Toast....It’s the simplest thing, really. A slice of sourdough, toasted with a little butter until it’s golden and crisp. A soft spread of ricotta, cool and creamy. Then the figs—fresh, raw, and sweet as honey. We like to drizzle a little honey on top too, just to lean into that floral sweetness. Add a a pinch of sea salt, or a few almonds if they’re around, but honestly? It doesn’t need much.
It's breakfast, it’s lunch, it’s a snack you didn’t know you needed until now. It’s also fleeting, just like the figs themselves—here for a moment, then gone until next year. Which is why we will be making this on repeat, all week long.
Fig Toast with Ricotta & Honey
Ingredients

1 pound fresh figs

6–8 slices sourdough bread

a little salted butter (for toasting)

1 cup whole milk ricotta (or cottage cheese)

Honey, for drizzling
Optional Toppings:

Sea salt flakes

Slivered almonds or pistachios

Hemp seeds

Balsamic reduction
Method

Butter the sourdough slices and toast until golden.

Spread ricotta or cottage cheese over each slice.

Slice fresh figs and arrange them on top.

Drizzle with honey and finish with any optional toppings you like.
