PERFECT PEACH CRISP {VEGAN + GLUTEN-FREE}

Peach season is short and sweet, and we plan to make the most of it! When local peaches start showing up at the farmers market, we can’t resist coming home with a big bag.

One of our favorite ways to enjoy them is this simple Peach Crisp. Juicy, ripe peaches bake beneath a golden oat and nut crumble for an easy summer dessert that lets the fruit do most of the work.

It’s naturally vegan and gluten-free, simple enough to make anytime, and perfect for summer entertaining.

Ingredients

  • 7–8 ripe peaches, halved, pitted and sliced
  • 1 cup gluten-free rolled oats
  • 1/4 cup almond flour
  • 1/4 cup gluten-free flour
  • 1/2 cup roughly chopped pecans or walnuts
  • 2 tablespoons light brown sugar
  • 2 tablespoons coconut sugar
  • Pinch of sea salt
  • 1/3 cup coconut oil, melted

Instructions

Preheat oven to 350°F. Lightly grease an 8×8-inch baking dish with coconut oil.

Arrange the peaches evenly in the baking dish.

In a mixing bowl, combine the oats, almond flour, gluten-free flour, nuts, brown sugar, coconut sugar and sea salt. Pour in the melted coconut oil and mix until everything is evenly coated and a crumbly topping forms.

Sprinkle the crumble evenly over the peaches.

Bake for 40–45 minutes, until the peaches are bubbling and the topping is crisp and golden.

Serve warm on its own or with a scoop of your favorite vanilla ice cream. For dairy-free, we love a good coconut or cashew-based vanilla.
