Fennel Apple Arugula Salad

Ingredients:

  • 1 large fennel bulb
  • 2 celery stalks
  • 1 apple (your favorite variety)
  • 1/4 cup pine nuts
  • 1/4 cup olive oil
  • 2 tsp honey
  • 1 lemon (juiced)
  • 4 cups arugula
  • Shaved parmesan cheese (for garnish)
  • Salt and pepper to taste

Instructions:
